Ingredients

  • 34 medium Apples (Granny Smith or Honeycrisp), sliced
  • 1 cup Sharp Cheddar Cheese, shredded
  • 1 round Pie Dough (homemade or store-bought)
  • 1 tablespoon Fresh Herbs (thyme or rosemary), finely chopped
  • 12 tablespoons Brown Sugar
  • 2 tablespoons Unsalted Butter
  • 1 Egg, beaten

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash, core, and slice the apples into thin wedges. Toss them with brown sugar, half the herbs, and a pinch of salt.
  3. Roll out the dough on a floured surface until about 12 inches in diameter.
  4. Place the sliced apples in the center of the dough, leaving a 2-inch border. Sprinkle with shredded cheddar and remaining herbs.
  5. Fold the edges of the dough over the apples, creating a rustic crust.
  6. Brush the exposed dough with the beaten egg.
  7. Bake for 40-45 minutes, or until the apples are tender and the crust is golden brown.
  8. Let cool for 10 minutes before slicing.
