Description

A refreshing side dish that combines crunchy vegetables, tart apples, and sweet cranberries, perfect for holiday gatherings.


Ingredients

  • 4 cups green cabbage, finely shredded
  • 2 medium carrots, peeled and grated
  • 1 large Granny Smith or Honeycrisp apple, cored and chopped
  • 1 cup dried cranberries
  • 1/2 cup red onion, finely chopped
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 2 tablespoons apple cider vinegar (or lemon juice)
  • 2 tablespoons honey (or maple syrup)
  • Salt and pepper to taste

Instructions

  1. Finely shred the green cabbage and grate the carrots.
  2. Core and chop the apples into thin matchsticks or small cubes.
  3. In a large mixing bowl, add dried cranberries and finely chopped red onion.
  4. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
  5. Pour the dressing over the shredded vegetable mix and toss until everything is well coated.
  6. Let the coleslaw sit in the refrigerator for at least 30 minutes to allow flavors to meld.
