Description

Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup fresh spinach, chopped
  • 1 tsp garlic powder
  • Salt, to taste
  • Pepper, to taste
  • 1 tbsp olive oil or cooking spray

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a baking dish with olive oil or cooking spray.
  3. In a mixing bowl, combine the cottage cheese, eggs, cheddar cheese, spinach, garlic powder, salt, and pepper. Mix well.
  4. Transfer the combined mixture into the prepared baking dish, spreading it evenly.
  5. Place the baking dish in the preheated oven and bake for 25 minutes until the edges are golden brown and the center is set.
  6. Remove from the oven and let it cool for a few minutes before slicing into squares and serving.

Notes

For lower calories, use egg whites instead of whole eggs. Nutritional yeast can replace cheddar cheese for a vegan option.
