Description

A nutritious breakfast dish featuring baked eggs with tomatoes and spinach, amplified with the flavors of feta cheese.


Ingredients

  • 4 large eggs
  • 4 oz feta cheese
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté spinach with minced garlic for 2-3 minutes until wilted.
  3. Fold in cherry tomatoes and cook for an additional 3-4 minutes.
  4. Spread the sautéed mixture in a baking dish and create wells for the eggs.
  5. Crumble feta cheese over the vegetables.
  6. Crack the eggs into the wells.
  7. Drizzle with more olive oil, season with salt, pepper, and red pepper flakes.
  8. Bake for 15-20 minutes until the eggs are done to your liking.
  9. Let cool for a few minutes and serve, garnished with fresh herbs.
