- 1 lb lean ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 1 cup peas
- 1 cup tomato sauce
- 1 cup beef broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 cup cheese (cheddar or mozzarella)
- 2 potatoes, sliced or cubed
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook until fragrant.
- Add the ground beef to the skillet, breaking it apart, and cook until browned and no longer pink, about 5-7 minutes.
- Incorporate the carrots and peas, stirring well until they begin to soften, about 4-5 minutes.
- Pour in the tomato sauce and beef broth. Stir in the dried herbs and a pinch of salt, cooking for another 5-10 minutes to combine flavors.
- In a greased casserole dish, spread the meat and vegetable mixture evenly. Layer sliced potatoes on top.
- Cover with aluminum foil and bake for 30 minutes. Remove foil, sprinkle cheese over the top, and bake uncovered for an additional 15 minutes until the cheese is melted and bubbling.
- Let sit for 5-10 minutes before serving.

Consider adding fresh herbs as a garnish for added freshness.
