  • Beat 8 oz cream cheese with 1/2 cup powdered sugar and 2 teaspoons vanilla until smooth and airy. Whip 1 cup cold heavy cream to soft peaks, then fold into the cream cheese. Optional: add a tablespoon lemon juice or a pinch of salt.
  • Whisk together 3 large eggs, 1 cup light corn syrup, 1/2 cup brown sugar, 2 tablespoons melted butter, 1 teaspoon vanilla, and a pinch of salt. Stir in 1 1/2 cups chopped pecans until coated; the mixture should be glossy and slightly viscous.
