1/4 teaspoon pie spice (cinnamon, nutmeg, or allspice)
Instructions
In a medium bowl, whisk together 2 cups unsweetened almond milk, 1 tablespoon fresh lemon juice, 1 teaspoon vanilla extract, and 2 tablespoons maple syrup or honey. Add a pinch of salt and 1/4 teaspoon pie spice; whisk to combine.
Stir in 1/2 cup chia seeds until evenly dispersed. Let stand 5–10 minutes, then stir again to prevent clumping.
If using Greek yogurt, whisk in 1/2 cup yogurt until smooth and creamy.
For a blueberry swirl, blend 1/2 to 1 cup blueberries with a splash of almond milk to create a puree, then fold into the chia mixture.
Divide the mixture into serving jars or bowls. Refrigerate for at least 2 hours, or up to overnight, until set.
