  • Parmesan cheese, grated, 2 tablespoons
  • Garlic powder, 1 teaspoon
  • Onion powder, 1/2 teaspoon
  • Smoked paprika, 1/2 teaspoon
  • Salt, 1/2 teaspoon
  • Black pepper, 1/4 teaspoon
  • Olive oil spray, 1 spray
  • Ketchup, 1/2 cup
  • Spicy mayo, 1/2 cup

  • Start by cleaning the mushrooms with a damp paper towel to remove any dirt. Pat them completely dry; remove the stems if thick and trim any uneven edges. Set up a breading station: flour in one shallow dish, whisked egg in another, and a breadcrumb–parmesan mix seasoned with garlic powder, onion powder, paprika, salt, and pepper in the third.
  • In a shallow bowl, combine the breadcrumbs, parmesan (or nutritional yeast), and all seasonings. For gluten-free options, use gluten-free breadcrumbs and consider adding 1 teaspoon crushed cornflakes for extra bite. Vegan crusts: replace parmesan with nutritional yeast and a pinch of garlic powder.
  • Dip each mushroom first in the flour, then into the egg, and finally into the breadcrumb mixture. Gently press to secure the crust. Do not overcrowd the basket.
  • Preheat air fryer to 400°F (200°C) for 3–5 minutes. Lightly spray the coated mushrooms with oil.
