- 4 Oranges (Navel or Valencia)
- 2 cups Granulated Sugar (or coconut sugar)
- 2 cups Water
- Pinch of Salt
- Optional Spices: Nutmeg, Cinnamon, Cloves
Instructions
- Wash the oranges thoroughly, slice off the ends, and cut them into quarters, removing the flesh.
- Place the peels in a pot filled with cold water and bring to a boil over medium heat. Simmer for 10 minutes.
- Drain the peels and rinse them under cold water.
- In the same pot, combine equal parts sugar and water and bring to a simmer, stirring until the sugar dissolves.
- Add the orange peels to the sugar syrup and simmer gently for 1 hour, stirring occasionally.
- After candying, remove the peels and place them on a wire rack to cool. Toss with additional sugar if desired.
- Store in an airtight container at room temperature.
