A delicious tart combining roasted butternut squash and caramelized onions, perfect for weeknights or entertaining.

- 1 Butternut Squash, peeled and cubed
- 2 Onions, sliced (sweet yellow or white)
- 1 package of Puff Pastry
- 2 tablespoons Olive Oil
- 1 teaspoon Thyme leaves
- 1/4 teaspoon Nutmeg
- Salt and Pepper to taste
Instructions
- Prepare the butternut squash by peeling and cubing it into small, uniform pieces.
- In a skillet, heat olive oil over medium heat, add onions, sprinkle with salt, and cook until caramelized (about 15 minutes).
- Spread cubed butternut squash on a baking sheet, drizzle with olive oil, season and roast in a preheated oven at 400°F (200°C) for about 25 minutes.
- Combine roasted squash and caramelized onions in a bowl with thyme.
- Roll out puff pastry and fit it into a tart pan, then pour the filling into the crust.
- Bake in the oven for 25-30 minutes or until the pastry is golden brown.
- Allow the tart to cool for a few minutes before slicing and serve warm.
Notes
For a healthier alternative, swap puff pastry for phyllo dough or use low-fat cheese if desired.
