Description

A delicious tart combining roasted butternut squash and caramelized onions, perfect for weeknights or entertaining.


Ingredients

  • 1 Butternut Squash, peeled and cubed
  • 2 Onions, sliced (sweet yellow or white)
  • 1 package of Puff Pastry
  • 2 tablespoons Olive Oil
  • 1 teaspoon Thyme leaves
  • 1/4 teaspoon Nutmeg
  • Salt and Pepper to taste

Instructions

  1. Prepare the butternut squash by peeling and cubing it into small, uniform pieces.
  2. In a skillet, heat olive oil over medium heat, add onions, sprinkle with salt, and cook until caramelized (about 15 minutes).
  3. Spread cubed butternut squash on a baking sheet, drizzle with olive oil, season and roast in a preheated oven at 400°F (200°C) for about 25 minutes.
  4. Combine roasted squash and caramelized onions in a bowl with thyme.
  5. Roll out puff pastry and fit it into a tart pan, then pour the filling into the crust.
  6. Bake in the oven for 25-30 minutes or until the pastry is golden brown.
  7. Allow the tart to cool for a few minutes before slicing and serve warm.

Notes

For a healthier alternative, swap puff pastry for phyllo dough or use low-fat cheese if desired.
