- 2 large onions (sweet or yellow)
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 1 cup all-purpose flour (or gluten-free flour)
- 1/2 cup cornmeal
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp salt
- 2 large eggs (or flaxseed mixture for vegan option)
- Oil for frying
Instructions
- Peel and slice the onions into thin rings, then soak them in cold water for 10-15 minutes.
- In a large bowl, combine flour, cornmeal, garlic powder, onion powder, paprika, and salt. Mix well.
- Beat the eggs in another bowl. Dip each onion ring in the egg, then coat with the flour mixture.
- Heat oil in a deep pan to 350°F (175°C). Fry the onion rings in batches for 3-4 minutes per side until golden brown.
- Remove with a slotted spoon and drain on paper towels. Allow to cool and crisp up.
