Ingredients

  • 2 large onions (sweet or yellow)
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup cornmeal
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • 2 large eggs (or flaxseed mixture for vegan option)
  • Oil for frying

Instructions

  1. Peel and slice the onions into thin rings, then soak them in cold water for 10-15 minutes.
  2. In a large bowl, combine flour, cornmeal, garlic powder, onion powder, paprika, and salt. Mix well.
  3. Beat the eggs in another bowl. Dip each onion ring in the egg, then coat with the flour mixture.
  4. Heat oil in a deep pan to 350°F (175°C). Fry the onion rings in batches for 3-4 minutes per side until golden brown.
  5. Remove with a slotted spoon and drain on paper towels. Allow to cool and crisp up.
