Ingredients

- 3 cups of cubed bread (French bread or brioche)
- 3 large eggs
- 1 cup of whole or almond milk
- 1/4 cup of granulated sugar
- 1/4 cup of packed brown sugar
- 1 tablespoon of ground cinnamon
- 1 teaspoon of vanilla extract
- A pinch of salt
- 2 tablespoons of melted butter (for greasing the muffin tin)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a standard muffin tin with melted butter or oil.
- In a medium bowl, whisk together the eggs, milk, vanilla extract, and both sugars until well combined.
- Incorporate the ground cinnamon and a pinch of salt into the wet ingredients.
- Add the cubed bread to the wet mixture, folding gently until all pieces are coated. Allow to sit for 5 minutes.
- Spoon the mixture into the prepared muffin cups, filling each about 3/4 of the way full.
- Bake for 20 to 25 minutes, or until the edges are golden brown and the centers are set.
- Let the muffin bites cool before removing them from the pan.
Notes
Enjoy warm, drizzled with maple syrup or dusted with powdered sugar for an optional touch.
