1 cup (227 g) unsalted butter, softened
3/4 cup (150 g) granulated sugar
1/2 cup (110 g) light brown sugar
2 large eggs
2 teaspoons pure vanilla extract
2 1/4 cups (281 g) all-purpose flour
2 Tbsp cornstarch
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup (120 g) mashed ripe bananas
1 cup (120 g) vanilla wafer cookies or graham cracker crumbs
1 cup (170 g) white chocolate chips
1/2 cup (60 g) dried banana chips
8 oz (226 g) cream cheese, softened
1 1/4 cups (150 g) powdered sugar
1 cup (240 ml) heavy cream
1/2 cup (120 g) fresh ripe banana, mashed
1 tsp extra vanilla extract
Whipped cream for topping (as needed)
Instructions
Preheat the oven to 350°F (175°C). Line baking sheets with parchment.
In a large bowl, beat the butter, granulated sugar, and light brown sugar until light and fluffy.
Beat in eggs and 2 teaspoons vanilla extract until well combined.
Whisk together the flour, cornstarch, baking powder, baking soda, and salt; gradually add to the wet ingredients and mix until just combined.
Stir in mashed bananas, vanilla wafer cookies or graham cracker crumbs, white chocolate chips, and dried banana chips.
Chill the dough for 45 minutes to 1 hour.
Scoop dough portions onto prepared baking sheets and bake 10–12 minutes, rotating sheets if needed. Cool on a wire rack.
Make the banana cream filling: in a bowl, beat the cream cheese with powdered sugar until smooth, then beat in heavy cream and the mashed ripe banana; add extra vanilla and whip to a thick, pipeable consistency.
Assemble: pair cookies and pipe/fill with the banana cream filling to form sandwich cookies; chill briefly to set.
Serve chilled with optional whipped cream topping and banana chips or wafer crumb garnish. Store leftovers in the fridge.
