Description
A creamy and nutritious Cottage Cheese Orzo Dish that combines texture and taste, perfect for weeknight dinners.
Ingredients
Scale
- 1 cup Orzo Pasta
- 1 cup Cottage Cheese
- 2 cups Spinach (fresh or frozen)
- 2 cloves Garlic, minced
- 2 cups Vegetable Broth
- 1/2 cup Grated Parmesan Cheese
- 2 tablespoons Olive Oil
- Salt and Pepper to taste
Instructions
- Cook the Orzo: Bring a large pot of salted water to a boil. Add the orzo and cook until al dente, about 8 to 10 minutes. Stir occasionally.
- Prepare the Garlic and Spinach: Heat olive oil in a large skillet over medium heat. Sauté minced garlic for about 1 minute until fragrant. Add spinach and cook until wilted, about 2 to 3 minutes.
- Combine Ingredients: Drain the orzo and add it to the skillet with the sautéed garlic and spinach.
- Add the Cottage Cheese: Stir in the cottage cheese and vegetable broth, mixing well until the cheese is melted and coats the pasta. Adjust consistency with more broth if needed.
- Cheese and Seasoning: Add grated parmesan, salt, and pepper. Stir well until everything is combined and heated through, about 2 minutes.
- Serve: Serve hot, topped with additional parmesan or a squeeze of lemon for freshness.
Notes
For a lighter version, opt for low-fat cottage cheese. Consider adding cooked protein like chicken or shrimp for a heartier meal.
