Description

Indulge in these rich and fluffy Cracker Barrel Cheesecake Pancakes, combining the creaminess of cheesecake with traditional pancake goodness.

Ingredients

Scale
  • 1 ½ cups All-Purpose Flour (or Whole Wheat Flour)
  • 2 tablespoons Granulated Sugar (substitute coconut sugar if desired)
  • 2 teaspoons Baking Powder
  • ½ teaspoon Salt
  • 1 ¼ cups Milk (or Almond Milk for dairy-free)
  • 2 large Eggs (or flaxseed meal mixed with water for vegan)
  • 1 teaspoon Vanilla Extract
  • 4 oz Cream Cheese, softened
  • ¼ cup Powdered Sugar
  • Whipped Cream for serving

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, mix together the milk, eggs, vanilla extract, and softened cream cheese until smooth.
  3. Combine both mixtures until just mixed; don’t overmix.
  4. Preheat your griddle or non-stick pan over medium heat and grease lightly with butter or oil.
  5. Using a ladle, pour the batter onto the hot griddle, making pancakes about 4 inches in diameter.
  6. Cook the pancakes for about 2-3 minutes or until bubbles form on the surface.
  7. Carefully flip the pancakes using a spatula and cook for another 2 minutes until golden brown.
  8. Repeat with remaining batter, adjusting heat as necessary.
  9. In a bowl, beat together cream cheese and powdered sugar until smooth for the cheesecake topping.
  10. Stack your pancakes on a plate, add a dollop of the cheesecake topping, drizzle with syrup, and finish with whipped cream.

Notes

For a lighter alternative, consider using Greek yogurt instead of cream cheese and try agave nectar for natural sweetness.
