- 2 tablespoons Granulated Sugar (substitute coconut sugar if desired)
- 2 teaspoons Baking Powder
- ½ teaspoon Salt
- 1 ¼ cups Milk (or Almond Milk for dairy-free)
- 2 large Eggs (or flaxseed meal mixed with water for vegan)
- 1 teaspoon Vanilla Extract
- 4 oz Cream Cheese, softened
- ¼ cup Powdered Sugar
- Whipped Cream for serving
Instructions

- In a separate bowl, mix together the milk, eggs, vanilla extract, and softened cream cheese until smooth.
- Combine both mixtures until just mixed; don’t overmix.
- Preheat your griddle or non-stick pan over medium heat and grease lightly with butter or oil.
- Using a ladle, pour the batter onto the hot griddle, making pancakes about 4 inches in diameter.
- Cook the pancakes for about 2-3 minutes or until bubbles form on the surface.
- Carefully flip the pancakes using a spatula and cook for another 2 minutes until golden brown.
- Repeat with remaining batter, adjusting heat as necessary.
- In a bowl, beat together cream cheese and powdered sugar until smooth for the cheesecake topping.
- Stack your pancakes on a plate, add a dollop of the cheesecake topping, drizzle with syrup, and finish with whipped cream.
Notes
For a lighter alternative, consider using Greek yogurt instead of cream cheese and try agave nectar for natural sweetness.
