Description

Deliciously satisfying dessert with a blend of tart cranberries and a crumbly topping.


Ingredients

  • 2 cups fresh cranberries
  • ½ cup granulated sugar
  • 1 tablespoon water
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • ¾ cup brown sugar
  • ½ cup unsalted butter
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, combine fresh cranberries, granulated sugar, and water. Cook over medium heat for about 10 minutes until cranberries burst and mixture thickens.
  3. In a large bowl, blend rolled oats, all-purpose flour, brown sugar, and salt. Cut in unsalted butter until mixture resembles coarse crumbs.
  4. In a greased 8×8-inch baking dish, press half of the crumble mixture into the bottom. Pour the cranberry filling evenly over the base and sprinkle the reserved crumble mixture on top.
  5. Bake for 30-35 minutes, or until the top is golden brown and filling bubbles around edges.
  6. Let the bars cool in the pan for at least 15 minutes before slicing.

Notes

Serve warm with yogurt or a dusting of powdered sugar. Consider using gluten-free flour for a gluten-free option.
