- 2 cups frozen pierogi
- 1 pound turkey sausage
- 1 onion, diced
- 1 bell pepper, diced (red, green, or yellow)
- 2 cloves garlic, minced
- 4 oz cream cheese
- 1 cup chicken broth
- Salt and pepper, to taste
- Fresh parsley or chives, for garnish
Instructions
- In a large skillet over medium heat, add the turkey sausage and sauté for about 5-7 minutes until browned and cooked through.
- Add diced onion and bell peppers to the skillet and stir for about 4-5 minutes until they are tender and fragrant.
- Toss in the minced garlic and stir for an additional 1-2 minutes until fragrant.
- Pour in the chicken broth, scraping any bits stuck to the bottom of the skillet.
- Mix in the cream cheese until well combined with the broth, about 2 minutes on low heat.
- Gently add the frozen pierogi to the skillet, coating them in the sauce. Cover and let cook for 8-10 minutes, stirring occasionally until heated through.
- Season with salt and pepper to taste, and garnish with fresh herbs before serving.
Notes
For a lighter version, substitute Greek yogurt for cream cheese. Store leftovers in an airtight container in the fridge for up to 3 days.
