Description

A quick and delicious skillet meal that combines creamy pierogi with savory turkey sausage and colorful vegetables, perfect for busy weeknights.


Ingredients

  • 2 cups frozen pierogi
  • 1 pound turkey sausage
  • 1 onion, diced
  • 1 bell pepper, diced (red, green, or yellow)
  • 2 cloves garlic, minced
  • 4 oz cream cheese
  • 1 cup chicken broth
  • Salt and pepper, to taste
  • Fresh parsley or chives, for garnish

Instructions

  1. In a large skillet over medium heat, add the turkey sausage and sauté for about 5-7 minutes until browned and cooked through.
  2. Add diced onion and bell peppers to the skillet and stir for about 4-5 minutes until they are tender and fragrant.
  3. Toss in the minced garlic and stir for an additional 1-2 minutes until fragrant.
  4. Pour in the chicken broth, scraping any bits stuck to the bottom of the skillet.
  5. Mix in the cream cheese until well combined with the broth, about 2 minutes on low heat.
  6. Gently add the frozen pierogi to the skillet, coating them in the sauce. Cover and let cook for 8-10 minutes, stirring occasionally until heated through.
  7. Season with salt and pepper to taste, and garnish with fresh herbs before serving.

Notes

For a lighter version, substitute Greek yogurt for cream cheese. Store leftovers in an airtight container in the fridge for up to 3 days.
