Description

A comforting and nutritious pasta dish made with creamy cottage cheese, pumpkin puree, and fresh spinach, perfect for chilly nights.


Ingredients

  • 8 oz Pasta (choose your favorite shape)
  • 1 cup Cottage Cheese
  • 1 cup Pumpkin Puree
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 1/3 cup Parmesan Cheese, grated
  • 1/4 teaspoon Nutmeg
  • Salt and Pepper, to taste
  • 2 cups Fresh Spinach

Instructions

  1. Cook the Pasta in salted boiling water until al dente.
  2. Heat the olive oil in a skillet and sauté the minced garlic for 1 minute.
  3. Add the pumpkin puree and cottage cheese, mixing to create a creamy sauce.
  4. Season the sauce with nutmeg, salt, and pepper.
  5. Stir in the cooked pasta and reserved pasta water as necessary, then fold in the fresh spinach.
  6. Serve topped with grated Parmesan cheese.

Notes

For a vegan option, substitute cottage cheese with silken tofu and use nutritional yeast in place of Parmesan.
