Ingredients

  • Salmon fillets (skin on or off): 2 fillets, 6 oz each
  • Olive oil: 1 tablespoon
  • Salt: 1/2 teaspoon
  • Black pepper: 1/4 teaspoon
  • Garlic cloves: 2
  • Shallot: 1 small
  • Dry white wine: 1/2 cup
  • Fresh lemon juice: 2 tablespoons
  • Lemon zest: 1 teaspoon
  • Heavy cream: 1/2 cup
  • Fish or chicken stock: 1/4 cup
  • Capers: 2 tablespoons
  • Fresh parsley: 2 tablespoons
  • Butter: 1 tablespoon

  • Instructions

  • Pat dry the salmon fillets with paper towels and season both sides with salt and pepper.
  • In a skillet, heat olive oil over medium-high heat. Sear salmon fillets (skin-side down if using skin-on) until a golden crust forms and the fish is almost cooked through, then flip to finish cooking. Remove the salmon and set aside.
  • In the same pan, reduce heat to medium and add minced garlic and finely minced shallot. Cook until fragrant, about 1 minute.
  • Deglaze with dry white wine (or stock) and simmer until reduced by about half.
  • Add lemon juice, lemon zest, and stock. Whisk in heavy cream and simmer until the sauce slightly thickens and coats the back of a spoon.
  • Stir in capers and butter; season to taste. Return the salmon to the pan briefly to coat with the sauce.
  • Garnish with fresh parsley and serve with pasta or vegetables as desired.
