Description

A comforting, hearty soup with Tuscan flavors, perfect for chilly evenings.


Ingredients

Scale
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 6 cups vegetable or chicken broth
  • 1 package Tuscan ravioli
  • 3 cups fresh spinach (or 1 cup frozen)
  • Parmesan cheese, for serving
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook for 5-7 minutes until the onions are translucent.
  2. Pour in the broth and bring to a gentle simmer.
  3. Add the ravioli and cook according to package instructions, about 5-7 minutes.
  4. Stir in the spinach and let it wilt for 2-3 minutes.
  5. Season with salt and pepper to taste.
  6. Ladle into bowls and top with grated Parmesan cheese before serving.

Notes

For a healthier version, use whole wheat ravioli or zucchini noodles.
