Ingredients

- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 6 cups vegetable or chicken broth
- 1 package Tuscan ravioli
- 3 cups fresh spinach (or 1 cup frozen)
- Parmesan cheese, for serving
- Salt and pepper, to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook for 5-7 minutes until the onions are translucent.
- Pour in the broth and bring to a gentle simmer.
- Add the ravioli and cook according to package instructions, about 5-7 minutes.
- Stir in the spinach and let it wilt for 2-3 minutes.
- Season with salt and pepper to taste.
- Ladle into bowls and top with grated Parmesan cheese before serving.
Notes
For a healthier version, use whole wheat ravioli or zucchini noodles.
