- 1 1/2 cups granulated sugar

- 1 cup vegetable oil
- 1 large egg
- 1 tbsp red food coloring
- 1 tsp vanilla extract
- 8 oz cream cheese (for filling)
- 1/4 cup powdered sugar (for filling)
Instructions
- Preheat your oven to 350°F (175°C).
- Line your baking sheets with parchment paper.
- Whisk together flour, cocoa powder, baking soda, and salt in a bowl.
- In another bowl, mix sugar and vegetable oil until combined; add egg, vanilla extract, and red food coloring, mixing until smooth.
- Gradually add dry ingredients to wet ingredients, mixing just until combined.
- Drop rounded tablespoons of dough onto prepared baking sheets.
- Bake for 10-12 minutes; cookies should look set but may seem soft.
- Cool on the baking sheets for 5 minutes, then transfer to a wire rack.
- Beat cream cheese with powdered sugar and vanilla extract until smooth for filling.
- Spread cream cheese filling on one cookie and sandwich with another.
Notes
For a gluten-free version, substitute almond or coconut flour. Use Greek yogurt for a lighter filling.
