Description

Delightful red velvet cookies with a tangy cream cheese filling, perfect for any occasion.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup vegetable oil
  • 1 large egg
  • 1 tbsp red food coloring
  • 1 tsp vanilla extract
  • 8 oz cream cheese (for filling)
  • 1/4 cup powdered sugar (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line your baking sheets with parchment paper.
  3. Whisk together flour, cocoa powder, baking soda, and salt in a bowl.
  4. In another bowl, mix sugar and vegetable oil until combined; add egg, vanilla extract, and red food coloring, mixing until smooth.
  5. Gradually add dry ingredients to wet ingredients, mixing just until combined.
  6. Drop rounded tablespoons of dough onto prepared baking sheets.
  7. Bake for 10-12 minutes; cookies should look set but may seem soft.
  8. Cool on the baking sheets for 5 minutes, then transfer to a wire rack.
  9. Beat cream cheese with powdered sugar and vanilla extract until smooth for filling.
  10. Spread cream cheese filling on one cookie and sandwich with another.

Notes

For a gluten-free version, substitute almond or coconut flour. Use Greek yogurt for a lighter filling.
