340 g boneless skinless chicken thighs
2 packs of dried ramen noodles
720 ml chicken broth
120 ml full-fat coconut milk
1–2 tablespoons of sriracha or chili paste
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
2 cups spinach or baby bok choy
3 scallions, sliced
2 lime wedges
Salt and pepper, to taste
Instructions
Mince the garlic, grate the ginger, and slice the scallions; wash greens and set aside.
In a large pot, heat olive oil over medium-high heat. Sear the chicken thighs until browned on both sides, about 3-4 minutes per side. Transfer to a plate.
Add the garlic and ginger to the pot and cook until fragrant, about 30 seconds. Stir in Sriracha or chili paste.
Pour in chicken broth, add soy sauce, rice vinegar, and coconut milk. Bring to a gentle simmer.
Return the chicken to the pot and simmer until cooked through, about 8-12 minutes. Remove and shred.
Return shredded chicken to the broth. Add greens and cook just until wilted, 1-2 minutes.
Meanwhile, cook ramen noodles according to package directions until al dente. Drain.
To serve, divide noodles into bowls. Ladle hot broth with chicken and greens over the noodles. Finish with scallions and lime wedges; serve with chili oil if desired.
