  • 720 ml chicken broth
  • 120 ml full-fat coconut milk
  • 1–2 tablespoons of sriracha or chili paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cups spinach or baby bok choy
  • 3 scallions, sliced
  • 2 lime wedges
  • Salt and pepper, to taste

  • Instructions

  • Mince the garlic, grate the ginger, and slice the scallions; wash greens and set aside.
  • In a large pot, heat olive oil over medium-high heat. Sear the chicken thighs until browned on both sides, about 3-4 minutes per side. Transfer to a plate.
  • Add the garlic and ginger to the pot and cook until fragrant, about 30 seconds. Stir in Sriracha or chili paste.
  • Pour in chicken broth, add soy sauce, rice vinegar, and coconut milk. Bring to a gentle simmer.
  • Return the chicken to the pot and simmer until cooked through, about 8-12 minutes. Remove and shred.
  • Return shredded chicken to the broth. Add greens and cook just until wilted, 1-2 minutes.
  • Meanwhile, cook ramen noodles according to package directions until al dente. Drain.
  • To serve, divide noodles into bowls. Ladle hot broth with chicken and greens over the noodles. Finish with scallions and lime wedges; serve with chili oil if desired.
