Description

A nourishing curry made with sweet potatoes and cauliflower, infused with aromatic spices for a comforting meal.


Ingredients

  • 2 Sweet Potatoes, peeled and diced
  • 1 head Cauliflower, cut into florets
  • 1 can Coconut Milk
  • 2 tablespoons Curry Powder
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 2 cups Vegetable Broth
  • 2 cups Fresh Spinach
  • Salt and Pepper, to taste
  • 1 tablespoon Lime Juice

Instructions

  1. Prepare your ingredients: Peel and dice sweet potatoes, cut cauliflower into florets, and chop onion, garlic, and ginger.
  2. Sauté the aromatics: Heat a tablespoon of oil in a pot over medium heat, add onion and sauté until translucent. Add garlic and ginger, cooking for 1-2 minutes.
  3. Add spices and vegetables: Stir in curry powder and toast for a minute. Add sweet potatoes and cauliflower, coating them in the mixture.
  4. Incorporate coconut milk and broth: Pour in coconut milk and broth, simmer gently for 15-20 minutes until vegetables are tender.
  5. Add spinach: Stir in spinach and cook for an additional 3-4 minutes until wilted. Season with salt and pepper.
  6. Finish with lime juice: Remove from heat and stir in lime juice before serving.

Notes

For a lighter version, consider using reduced-fat coconut milk. You can also add chickpeas for additional protein.
