- 2 teaspoons gelatin powder (or agar-agar for vegan)
- 2 tablespoons cold water
- 1 ¼ cups heavy cream (or coconut cream for dairy-free)
Instructions
- Prepare the Gingerbread Layer: Crush gingerbread cookies into fine crumbs and mix with melted butter.
- Make the Coffee Mixture: Heat espresso and stir in sugar, cinnamon, ginger, and nutmeg; let cool.
- Bloom the Gelatin: Sprinkle gelatin over cold water and let sit for 5 minutes.
- Combine Ingredients: Mix bloomed gelatin into cooled coffee; whip cream and fold in.
- Assemble the Domes: Press gingerbread mixture in molds, fill with coffee mousse.
- Chill: Cover molds and refrigerate for at least 2 hours.
- Serve: Invert molds on plate; garnish if desired.
