A delightful dessert that combines the warmth of gingerbread spices with the creaminess of traditional tiramisu.

- Gingerbread Cookies
- 16 ounces Mascarpone Cheese
- 1 ½ cups Heavy Cream
- 1 cup Strong Coffee or Espresso
- 1 ounce Dark Rum (optional)
- ½ cup Sugar
- 1 teaspoon Ground Ginger
- 1 teaspoon Cinnamon
- Mulled Wine or Apple Cider (for soaking)
Instructions
- Brew about one cup of strong coffee or espresso and let it cool slightly, then stir in dark rum or vanilla extract if desired.
- In a large bowl, whip 1 ½ cups of heavy cream until soft peaks form. Set aside.
- In another bowl, mix 16 ounces of mascarpone cheese with ½ cup of sugar, 1 teaspoon of ground ginger, and 1 teaspoon of cinnamon until smooth. Gently fold in the whipped cream.
- Quickly dip gingerbread cookies into the coffee mixture and layer them in the bottom of a serving dish.
- Spread half of the mascarpone mixture over the first layer of cookies, then repeat with another layer of cookies and the remaining mascarpone.
- Cover and refrigerate for at least 4 hours before serving. Dust with cocoa powder or extra ground cinnamon before serving.
