Description

A delightful dessert that combines the warmth of gingerbread spices with the creaminess of traditional tiramisu.


Ingredients

  • Gingerbread Cookies
  • 16 ounces Mascarpone Cheese
  • 1 ½ cups Heavy Cream
  • 1 cup Strong Coffee or Espresso
  • 1 ounce Dark Rum (optional)
  • ½ cup Sugar
  • 1 teaspoon Ground Ginger
  • 1 teaspoon Cinnamon
  • Mulled Wine or Apple Cider (for soaking)

Instructions

  1. Brew about one cup of strong coffee or espresso and let it cool slightly, then stir in dark rum or vanilla extract if desired.
  2. In a large bowl, whip 1 ½ cups of heavy cream until soft peaks form. Set aside.
  3. In another bowl, mix 16 ounces of mascarpone cheese with ½ cup of sugar, 1 teaspoon of ground ginger, and 1 teaspoon of cinnamon until smooth. Gently fold in the whipped cream.
  4. Quickly dip gingerbread cookies into the coffee mixture and layer them in the bottom of a serving dish.
  5. Spread half of the mascarpone mixture over the first layer of cookies, then repeat with another layer of cookies and the remaining mascarpone.
  6. Cover and refrigerate for at least 4 hours before serving. Dust with cocoa powder or extra ground cinnamon before serving.
