Ingredients

  • Ground chicken, 1 lb (450 g), 93% lean
  • Onion, finely grated, 1 small onion (about 1/4 cup)
  • Garlic, minced, 2 cloves
  • Egg, 1 large
  • Breadcrumbs, 1/3 cup
  • Feta cheese, crumbled, 1/4 cup
  • Fresh parsley, chopped, 2 tablespoons
  • Fresh dill, chopped, 1 tablespoon
  • Dried oregano, 1 teaspoon
  • Lemon zest, 1 teaspoon
  • Lemon juice, 1 tablespoon
  • Olive oil, 1 tablespoon
  • Salt, 1/2 teaspoon
  • Black pepper, 1/4 teaspoon
  • Kalamata olives, pitted, diced (optional), 1/4 cup

  • Instructions

  • In a large bowl, combine ground chicken, grated onion, garlic, feta, parsley, dill, oregano, lemon zest and juice, olive oil, egg, breadcrumbs, salt, and pepper. Mix until just combined.
  • Let the mixture rest for 10 minutes to hydrate the breadcrumbs and allow the flavors to meld.
  • Preheat the oven to 400°F (200°C) if baking, or heat a thin layer of oil in a skillet over medium heat for pan-frying.
  • Shape the mixture into meatballs about 1.5 inches (4 cm) in diameter and place on a parchment-lined baking sheet.
  • Bake for 14–16 minutes, turning once, until the internal temperature reaches 165°F (74°C). If pan-frying, cook until browned and cooked through, about 3–4 minutes per side.
  • Serve with a yogurt-dill sauce or tzatziki and your choice of sides.
