Ingredients
Ground chicken, 1 lb (450 g), 93% lean
Onion, finely grated, 1 small onion (about 1/4 cup)
Garlic, minced, 2 cloves
Egg, 1 large
Breadcrumbs, 1/3 cup
Feta cheese, crumbled, 1/4 cup
Fresh parsley, chopped, 2 tablespoons
Fresh dill, chopped, 1 tablespoon
Dried oregano, 1 teaspoon
Lemon zest, 1 teaspoon
Lemon juice, 1 tablespoon
Olive oil, 1 tablespoon
Salt, 1/2 teaspoon
Black pepper, 1/4 teaspoon
Kalamata olives, pitted, diced (optional), 1/4 cup
Instructions
In a large bowl, combine ground chicken, grated onion, garlic, feta, parsley, dill, oregano, lemon zest and juice, olive oil, egg, breadcrumbs, salt, and pepper. Mix until just combined.
Let the mixture rest for 10 minutes to hydrate the breadcrumbs and allow the flavors to meld.
Preheat the oven to 400°F (200°C) if baking, or heat a thin layer of oil in a skillet over medium heat for pan-frying.
Shape the mixture into meatballs about 1.5 inches (4 cm) in diameter and place on a parchment-lined baking sheet.
Bake for 14–16 minutes, turning once, until the internal temperature reaches 165°F (74°C). If pan-frying, cook until browned and cooked through, about 3–4 minutes per side.
Serve with a yogurt-dill sauce or tzatziki and your choice of sides.
