Ingredients

- 2 lbs Yukon Gold or red potatoes
- 1 medium red onion, thinly sliced
- 1 large English cucumber, diced
- 1 bell pepper (red or yellow), diced
- 1 cup Kalamata olives, pitted
- 1 cup crumbled feta cheese
- 1/4 cup extra virgin olive oil
- 1/4 cup freshly squeezed lemon juice
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions
- Wash the potatoes and cut them into 1-inch pieces. Place in a pot, cover with cold water, add salt, and bring to a boil.
- Once boiling, reduce heat and let simmer for 15-20 minutes until fork-tender. Drain and rinse under cold water.
- While potatoes boil, slice the red onion, cucumber, and bell pepper into bite-sized pieces.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- In a large bowl, combine cooled potatoes, chopped vegetables, olives, and feta. Drizzle dressing on top and toss gently to coat.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
Notes
For a lighter option, use reduced-fat feta. For a vegan version, substitute vegan feta and consider using yogurt dressing.
