Ingredients

- 4 cups fresh spinach
- 2 cups kale, chopped
- 1 cup fresh basil
- 2 leeks, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 tablespoons lemon juice
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Prepare the ingredients: wash all the greens and chop leeks and garlic.
- In a large pot, heat olive oil over medium heat, then sauté leeks for 4 minutes until soft. Add garlic and cook for 1 minute.
- Add spinach and kale to the pot and stir to combine.
- Pour in vegetable broth and let simmer for 10-15 minutes.
- Blend the soup using an immersion blender until desired consistency is reached.
- Return soup to pot, stir in lemon juice, and season with salt and pepper. Serve hot.
Notes
Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
