Description

A delightful and balanced autumn dish featuring ground turkey and brown butter sage stuffed into sweet pumpkins.


Ingredients

Scale
  • Small sugar pie or decorative pumpkins
  • 1 lb ground turkey
  • 1/4 cup unsalted butter
  • Fresh sage leaves, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the pumpkins and scoop out the seeds.
  2. Melt the unsalted butter in a medium pan over medium heat until golden brown.
  3. Add chopped onions and minced garlic to the browned butter and sauté until translucent.
  4. Add ground turkey to the pan and cook until no longer pink, seasoning with salt, pepper, and sage.
  5. In a bowl, mix the turkey mixture with breadcrumbs and Parmesan cheese; adjust seasoning to taste.
  6. Stuff each pumpkin with the turkey filling and replace the lids.
  7. Bake the stuffed pumpkins on a baking sheet for 30-35 minutes until tender.

Notes

Serve over mixed greens and drizzle with balsamic glaze for extra flavor.
