- 4 Bell Peppers (red, yellow, or green)
- 1 cup Ricotta Cheese
- ½ cup Grated Parmesan Cheese
- 1 cup Chopped Fresh Herbs (basil, parsley, thyme)
- 2 Minced Garlic Cloves
- 1 tablespoon Olive Oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Wash the bell peppers, cut them in half lengthwise, and remove seeds and membranes.
- In a mixing bowl, combine ricotta cheese, grated Parmesan cheese, chopped herbs, and minced garlic. Season with salt and pepper; mix until well incorporated.
- Spoon the ricotta mixture into each pepper half and press gently to pack the filling.
- Place the stuffed peppers in a baking dish and drizzle with olive oil.
- Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until golden and bubbly.
- Let cool slightly before serving and garnish with fresh herbs.
