Description

Delicious roasted carrots enhanced with honey, garlic, and butter, making for a nutrient-rich side dish.


Ingredients

  • 1 lb fresh carrots
  • 4 tablespoons butter
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the carrots, cutting them into uniform sizes for even cooking.
  3. In a small saucepan, melt the butter over low heat, then stir in honey and minced garlic; cook until fragrant.
  4. Toss the prepared carrots with the honey garlic butter mixture, adding salt and pepper to taste.
  5. Spread the carrots on a baking sheet and roast for 25-30 minutes, flipping halfway.
  6. Remove from the oven, optionally garnish with parsley, and serve.

Notes

For a dairy-free version, substitute butter with olive oil or coconut oil.
