Description

A delicious side dish featuring carrots roasted to perfection with honey, making them irresistible even to kids.


Ingredients

  • 1 lb fresh young carrots, peeled
  • 2 tbsp honey (or maple syrup for a vegan alternative)
  • 2 tbsp olive oil (or avocado oil)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh thyme or rosemary (or 1 tsp dried)

Instructions

  1. Wash and peel the carrots, cutting them into halves or quarters if thick.
  2. Preheat your oven to 400°F (200°C).
  3. In a mixing bowl, combine the carrots, olive oil, honey, salt, pepper, and herbs, tossing until evenly coated.
  4. Transfer the mixture onto a lined baking sheet in a single layer.
  5. Roast for 25 minutes, tossing halfway through until tender and caramelized.
  6. Remove from the oven, drizzle with more honey if desired, and garnish with fresh herbs before serving.

Notes

For best results, make sure not to crowd the baking sheet to prevent steaming. Serve warm and enjoy the delightful flavors.
