Instructions
- Preheat your oven to 200°F (93°C) and line a baking tray with parchment paper.
- Whip the egg whites on medium speed until foamy, then gradually add sugar and beat until stiff peaks form.
- Gently fold in the vanilla extract.
- Carefully fold in the cornflakes until evenly coated.
- Melt the dark chocolate and let it cool slightly before adding it to the meringue mixture.
- Fold in the melted chocolate, being cautious to maintain airiness.
- Pipe or spoon the mixture into small clusters on the baking tray.
- Bake for approximately 1 hour until crisp on the outside.
- Turn off the oven and leave meringues inside for another hour to dry and cool.
Notes
For a vegan option, substitute egg whites with aquafaba. Store in an airtight container to keep crispy.
