Description

Delight in the festive spirit with these light and crunchy meringues, combining egg whites, chocolate, and cornflakes for a unique holiday treat.


Ingredients

  • 4 Egg Whites
  • 1 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 2 cups Cornflakes
  • 1 cup Dark Chocolate, melted
  • 1 pinch Sea Salt
  • 3 tbsp Cocoa Powder

Instructions

  1. Preheat your oven to 200°F (93°C) and line a baking tray with parchment paper.
  2. Whip the egg whites on medium speed until foamy, then gradually add sugar and beat until stiff peaks form.
  3. Gently fold in the vanilla extract.
  4. Carefully fold in the cornflakes until evenly coated.
  5. Melt the dark chocolate and let it cool slightly before adding it to the meringue mixture.
  6. Fold in the melted chocolate, being cautious to maintain airiness.
  7. Pipe or spoon the mixture into small clusters on the baking tray.
  8. Bake for approximately 1 hour until crisp on the outside.
  9. Turn off the oven and leave meringues inside for another hour to dry and cool.

Notes

For a vegan option, substitute egg whites with aquafaba. Store in an airtight container to keep crispy.
