Ingredients

- 2 lbs chicken thighs, cut into bite-sized pieces
- 2 negi (scallions), cut into 2-inch pieces
- 1/4 cup soy sauce
- 2 tbsp mirin
- 2 tbsp sake
- 1 tbsp sugar
- 1 tbsp sesame seeds, toasted
- Skewers (bamboo or metal)
Instructions
- Cut the chicken thighs into bite-sized pieces. Discard any excess fat.
- In a bowl, mix together soy sauce, mirin, sake, and sugar until dissolved.
- Marinate the chicken pieces for at least 15 minutes.
- Preheat your grill or grill pan over medium heat. Soak bamboo skewers in water for 30 minutes if using.
- Thread chicken and scallion segments alternately onto skewers.
- Grill skewers for 5-7 minutes on each side until cooked through.
- Brush additional marinade on chicken during the last few minutes for glaze.
- Sprinkle toasted sesame seeds and serve with extra soy sauce.
