Description

A quick and satisfying pasta dish that combines tender chicken, vibrant lemon, and aromatic garlic, perfect for weeknight dinners.


Ingredients

  • 1 pound Chicken Breast, chopped
  • 8 ounces Pasta (spaghetti or penne)
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic, minced
  • Juice of 1 large Lemon
  • 1/2 cup Parmesan Cheese, grated
  • 2 cups Spinach
  • Salt and Pepper to taste
  • Red Pepper Flakes (optional)

Instructions

  1. Gather and prepare all ingredients: chop chicken, mince garlic, and grate Parmesan.
  2. In a large pot, bring salted water to a boil. Add pasta and cook until al dente. Drain, reserving a cup of pasta water.
  3. In a large skillet over medium heat, add olive oil. Once hot, add chicken and cook for 5-7 minutes until golden brown and cooked through. Season with salt and pepper.
  4. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Add drained pasta to the skillet with chicken, pour in lemon juice, and toss to combine. Add reserved pasta water as needed.
  6. Stir in spinach until wilted, then mix in grated Parmesan cheese.
  7. Serve hot, garnished with extra Parmesan and red pepper flakes if desired.

Notes

For a healthier alternative, substitute regular pasta with zoodles or whole wheat pasta. Leftovers can be stored in an airtight container for up to three days.
