Description

Delicious and nutritious lemon poppyseed protein balls that are easy to make, packed with protein, and perfect for any snack time.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup pea protein powder
  • 2 tablespoons chia seeds
  • 2 tablespoons poppy seeds
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • Zest and juice of 1 lemon
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, combine the rolled oats, pea protein powder, poppy seeds, and chia seeds. Mix thoroughly.
  2. In a separate bowl, mix the almond butter, honey (or maple syrup), lemon zest, and lemon juice until smooth.
  3. Gradually pour the wet mixture into the dry ingredients and mix until fully combined.
  4. Scoop out portions of the mixture and roll into bite-sized balls.
  5. Place on a parchment-lined tray and refrigerate for 30 minutes to firm up.
  6. Once chilled, enjoy your Lemon Poppyseed Protein Balls!
