Description

A light and indulgent dessert that combines healthy ingredients for a guilt-free treat.


Ingredients

  • 2 cups Cottage Cheese
  • 1 cup Raspberries
  • Zest of 1 Lemon
  • 1/4 cup Honey or Maple Syrup
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Almond Flour
  • 1 teaspoon Baking Powder
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease an 8×8-inch baking dish with cooking spray or line it with parchment paper.
  3. In a large bowl, combine the cottage cheese and eggs until smooth yet slightly chunky.
  4. Stir in honey or maple syrup, vanilla extract, and lemon zest.
  5. In another bowl, mix the almond flour, baking powder, and salt, then fold into the cottage cheese mixture until just combined.
  6. Gently fold in the raspberries.
  7. Transfer the mixture into the prepared baking dish.
  8. Bake for 30 minutes or until golden brown and a toothpick inserted comes out clean.
  9. Allow to cool for at least 10 minutes before slicing.
