Description

Create your own delicious and customizable version of the classic Little Debbie Star Crunch at home, perfect for busy families.


Ingredients

Scale
  • 3 cups Rice Crispy Cereal
  • 4 cups marshmallows (or vegan marshmallows)
  • 1/2 cup butter (or coconut oil)
  • 1 cup semi-sweet chocolate chips (dark or white chocolate optional)
  • 1/2 cup peanut butter (or sunbutter)
  • 1 tsp vanilla extract

Instructions

  1. Prepare your baking dish by greasing a 9×13 inch baking dish with butter or cooking spray.
  2. In a large saucepan, melt butter over medium heat. Add marshmallows and stir until completely melted and blended.
  3. Remove from heat and mix in peanut butter and vanilla extract until smooth.
  4. Add Rice Crispy cereal and stir until all cereal is coated.
  5. Fold in chocolate chips while the mixture is still warm.
  6. Pour mixture into prepared baking dish and press down evenly with a spatula.
  7. Allow to cool at room temperature for 20 minutes before cutting into squares or bars.

Notes

Store in an airtight container at room temperature for up to a week. For longer storage, refrigerate or freeze wrapped individual bars.
