Create your own delicious and customizable version of the classic Little Debbie Star Crunch at home, perfect for busy families.
Ingredients

- 3 cups Rice Crispy Cereal
- 4 cups marshmallows (or vegan marshmallows)
- 1/2 cup butter (or coconut oil)
- 1 cup semi-sweet chocolate chips (dark or white chocolate optional)
- 1/2 cup peanut butter (or sunbutter)
- 1 tsp vanilla extract
Instructions
- Prepare your baking dish by greasing a 9×13 inch baking dish with butter or cooking spray.
- In a large saucepan, melt butter over medium heat. Add marshmallows and stir until completely melted and blended.
- Remove from heat and mix in peanut butter and vanilla extract until smooth.
- Add Rice Crispy cereal and stir until all cereal is coated.
- Fold in chocolate chips while the mixture is still warm.
- Pour mixture into prepared baking dish and press down evenly with a spatula.
- Allow to cool at room temperature for 20 minutes before cutting into squares or bars.
Notes
Store in an airtight container at room temperature for up to a week. For longer storage, refrigerate or freeze wrapped individual bars.
