Ingredients

  • 2 ripe tomatoes, diced

  • 1/2 cup ketchup
  • 1 avocado, diced
  • Hot sauce, to taste

Instructions

  1. Prepare the shrimp by boiling them in salted water for 2-3 minutes until pink and opaque, then transfer to an ice bath.
  2. Finely dice the tomatoes, red onion, and cilantro.
  3. In a large bowl, combine ketchup, lime juice, and hot sauce, stirring until well blended.
  4. Chop shrimp into bite-sized pieces, add to the bowl with diced vegetables, and toss to coat.
  5. Cover and refrigerate for at least 15 minutes to let the flavors meld.
  6. Garnish with avocado and additional cilantro before serving with tortilla chips, if desired.

Notes
