- 2 ripe tomatoes, diced

- 1/4 cup fresh cilantro, chopped
- 1/4 cup freshly squeezed lime juice
- 1/2 cup ketchup
- 1 avocado, diced
- Hot sauce, to taste
Instructions
- Prepare the shrimp by boiling them in salted water for 2-3 minutes until pink and opaque, then transfer to an ice bath.
- Finely dice the tomatoes, red onion, and cilantro.
- In a large bowl, combine ketchup, lime juice, and hot sauce, stirring until well blended.
- Chop shrimp into bite-sized pieces, add to the bowl with diced vegetables, and toss to coat.
- Cover and refrigerate for at least 15 minutes to let the flavors meld.
- Garnish with avocado and additional cilantro before serving with tortilla chips, if desired.
Notes
For a spicier version, add more hot sauce or diced jalapeños. Substitute shrimp with tofu or chickpeas for a plant-based option.
