Description

Ingredients

  • 4 Fresh Corn on the Cobs
  • 1/2 cup Mayonnaise
  • 1/2 cup Cotija Cheese, crumbled
  • 1 tsp Chili Powder
  • 2 tbsp Lime Juice
  • 1/4 cup Fresh Cilantro, chopped
  • Salt, to taste

Instructions

  1. Shuck the corn, removing the husk and silk, and rinse under cold water.
  2. Cook the corn by grilling, boiling, or roasting: Grill at medium-high heat for 10-15 minutes until tender and slightly charred, or boil in salted water for 5-7 minutes.
  3. In a bowl, mix together mayonnaise, lime juice, chili powder, and salt to create the dressing.
  4. Once cooked, let the corn cool slightly and generously coat with the creamy dressing.
  5. Sprinkle Cotija cheese over the coated corn, ensuring it’s well covered.
  6. Garnish with freshly chopped cilantro before serving.

Notes

For a lighter option, substitute Greek yogurt for mayonnaise and use nutritional yeast in place of Cotija cheese for a vegan version.
