- 4 Fresh Corn on the Cobs
- 1/2 cup Mayonnaise
- 1/2 cup Cotija Cheese, crumbled
- 1 tsp Chili Powder
- 2 tbsp Lime Juice
- 1/4 cup Fresh Cilantro, chopped
- Salt, to taste
Instructions
- Shuck the corn, removing the husk and silk, and rinse under cold water.
- Cook the corn by grilling, boiling, or roasting: Grill at medium-high heat for 10-15 minutes until tender and slightly charred, or boil in salted water for 5-7 minutes.
- In a bowl, mix together mayonnaise, lime juice, chili powder, and salt to create the dressing.
- Once cooked, let the corn cool slightly and generously coat with the creamy dressing.
- Sprinkle Cotija cheese over the coated corn, ensuring it’s well covered.
- Garnish with freshly chopped cilantro before serving.
Notes
For a lighter option, substitute Greek yogurt for mayonnaise and use nutritional yeast in place of Cotija cheese for a vegan version.
