Ingredients

  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 package instant chocolate pudding mix
  • 1 teaspoon baking soda
  • 1 cup mint chocolate chips
  • 1 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, followed by the vanilla extract, and beat until smooth.
  4. In another bowl, whisk together the all-purpose flour, chocolate pudding mix, and baking soda.
  5. Gradually add the dry mixture to the wet ingredients and mix until just combined.
  6. Fold in the mint chocolate chips and chopped nuts (if using).
  7. Scoop tablespoons of cookie dough onto a parchment-lined baking sheet and bake for 10-12 minutes.
  8. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a nut-free version, omit the nuts. Use coconut oil for a dairy-free option.
