Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, followed by the vanilla extract, and beat until smooth.
- In another bowl, whisk together the all-purpose flour, chocolate pudding mix, and baking soda.
- Gradually add the dry mixture to the wet ingredients and mix until just combined.
- Fold in the mint chocolate chips and chopped nuts (if using).
- Scoop tablespoons of cookie dough onto a parchment-lined baking sheet and bake for 10-12 minutes.
- Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.

For a nut-free version, omit the nuts. Use coconut oil for a dairy-free option.
