Surprise your loved ones with a stunning Pink Velvet Cake that is as delicious as it is beautiful, perfect for Mother’s Day celebrations.

Ingredients

Scale
  • 2 cups All-Purpose Flour
  • 1 ½ cups Granulated Sugar
  • 2 tbsp Cocoa Powder
  • 2 tsp Baking Powder
  • ½ tsp Salt
  • 3 large Eggs
  • 1 cup Vegetable Oil
  • 1 cup Buttermilk
  • 2 tsp Vanilla Extract
  • 12 tbsp Red Food Coloring
  • 1 cup Butter (for frosting)
  • 4 cups Powdered Sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans or line them with parchment paper.
  3. In a mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  4. In a separate bowl, mix the granulated sugar and vegetable oil, then add the eggs, buttermilk, and vanilla extract, beating until smooth.
  5. Gradually combine the dry ingredients with the wet mixture, alternating with buttermilk. Stir in red food coloring until reaching desired pink shade.
  6. Divide the batter evenly between the prepared pans and bake for 25-30 minutes.
  7. Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
  8. In a mixing bowl, beat the softened butter and powdered sugar until fluffy.
  9. Once the cakes are cool, layer one on a serving plate, spread frosting, place the second layer, and frost the top and sides of the cake.
  10. Decorate with edible flowers, sprinkles, or fresh fruits before serving.

Notes

For a vegan option, replace eggs with apple sauce and use vegan butter for frosting.
