Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine flour, sugar, baking powder, and salt. In another bowl, cream softened butter until light and fluffy. Add eggs one at a time, mixing well. Gradually blend dry ingredients into the wet mixture, alternating with milk.
- Pour the batter into a greased 9×13-inch baking pan. Bake for about 25 minutes, or until a toothpick comes out clean. Allow to cool completely.
- Dissolve gelatin in warm fruit juice according to package instructions. Let it sit until slightly thickened but not set.
- Poke holes in the cooled cake with a fork. Pour the gelatin mixture over the cake, ensuring it fills the holes. Add fresh fruit on top, if desired.
- Refrigerate for at least 2 hours until fully set.
- Slice into squares and serve chilled, garnished with whipped cream or fresh fruit.
