A quick and delicious one-skillet meal featuring salmon and orzo, perfect for busy weeknight dinners.

Ingredients

Scale
  • 2 Salmon Fillets
  • 1 cup Orzo Pasta
  • 1 Lemon (zest and juice)
  • 3 cloves Garlic (minced)
  • 2 cups Vegetable or Chicken Broth
  • 2 cups Fresh Spinach
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Prepare the ingredients: Rinse spinach, zest lemon, and cut salmon into fillets if needed.
  2. Cook the salmon: In a skillet over medium-high heat, add olive oil, season salmon with salt and pepper, and cook until crispy.
  3. Sauté aromatics: Add olive oil, sauté minced garlic until fragrant, then add spinach and cook until wilted.
  4. Cook the orzo: Toast orzo in the skillet, then add broth and simmer until orzo is tender.
  5. Final touches: Stir in lemon juice and zest, reheat salmon in the skillet.
  6. Serve: Spoon orzo and spinach onto plates, top with salmon, and garnish as desired.

Notes

For variation, try substituting salmon with chicken or using whole wheat orzo for added fiber.
