Description

A delightfully moist Orange Creamsicle Cake that merges tangy orange zest with sweet flavors reminiscent of childhood ice cream popsicles, perfect for summer gatherings.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter
  • 1 cup orange juice
  • Zest of 2 oranges
  • 3 large eggs
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large mixing bowl, beat the unsalted butter and granulated sugar together until light and fluffy, about three minutes.
  4. Add the eggs one at a time, mixing well after each addition. Then blend in the orange juice and orange zest until fully combined.
  5. In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the sour cream.
  7. Divide the batter evenly between the prepared cake pans, smoothing the tops with a spatula.
  8. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Once baked, let them cool in the pans for about 10 minutes before turning them out onto wire racks to cool completely.
  10. Frost with your favorite cream cheese or buttercream frosting infused with orange zest, slice, and serve.

Notes

Consider using Greek yogurt instead of sour cream for a protein boost and slight flavor change. Pair with ice cream or garnish with fresh fruit for serving.
