  • 680 g boneless, skinless chicken tenders
  • 2 large eggs
  • 2–3 tablespoons milk or buttermilk
  • 120 g whole wheat breadcrumbs
  • 60 g grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Olive oil spray, as needed
  • 1/2 cup crushed cornflakes
  • 1/2 teaspoon lemon zest

  • Instructions

  • Preheat the oven to 425°F (220°C). Line a sheet pan with parchment paper.
  • In a shallow dish, whisk the eggs with the milk or buttermilk.
  • In a separate bowl, combine the breadcrumbs, grated parmesan cheese, garlic powder, paprika, dried oregano, salt and black pepper.
  • Dip each chicken tender into the egg mixture, then coat in the crumb mixture. For extra crunch, mix in lightly crushed cornflakes and optional lemon zest to the crust.
  • Place the coated tenders on the prepared sheet pan and spray lightly with olive oil to help crisp the crust.
  • Bake for 14–16 minutes, flipping once halfway through, until the crust is golden and the chicken is cooked through. If desired, broil for 1–2 minutes to further crisp the crust.
  • Let the tenders rest briefly, then serve with dipping sauces or lemon wedges. Leftovers can be stored in the fridge up to 3 days and reheated at 350°F for 6–8 minutes.
