680 g boneless, skinless chicken tenders
2 large eggs
2–3 tablespoons milk or buttermilk
120 g whole wheat breadcrumbs
60 g grated parmesan cheese
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Olive oil spray, as needed
1/2 cup crushed cornflakes
1/2 teaspoon lemon zest
Instructions
Preheat the oven to 425°F (220°C). Line a sheet pan with parchment paper.
In a shallow dish, whisk the eggs with the milk or buttermilk.
In a separate bowl, combine the breadcrumbs, grated parmesan cheese, garlic powder, paprika, dried oregano, salt and black pepper.
Dip each chicken tender into the egg mixture, then coat in the crumb mixture. For extra crunch, mix in lightly crushed cornflakes and optional lemon zest to the crust.
Place the coated tenders on the prepared sheet pan and spray lightly with olive oil to help crisp the crust.
Bake for 14–16 minutes, flipping once halfway through, until the crust is golden and the chicken is cooked through. If desired, broil for 1–2 minutes to further crisp the crust.
Let the tenders rest briefly, then serve with dipping sauces or lemon wedges. Leftovers can be stored in the fridge up to 3 days and reheated at 350°F for 6–8 minutes.
