Description

A refreshing twist on the classic Italian dessert, this Peach Tiramisu features juicy peaches and rich mascarpone for a delightful fusion of flavors.


Ingredients

Scale
  • 3 ripe peaches, washed and sliced
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfingers
  • 1 cup peach juice or syrup
  • Fresh mint leaves (optional)

Instructions

  1. Prepare the peaches by washing, peeling, and slicing them thinly; set aside.
  2. In a mixing bowl, whip heavy cream and sugar until soft peaks form.
  3. In another bowl, mix mascarpone cheese and vanilla extract, then fold in the whipped cream until well combined.
  4. Soak each ladyfinger in peach juice quickly and layer them in the bottom of a serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers and add a layer of sliced peaches; repeat with another layer of soaked ladyfingers and remaining mascarpone mixture.
  6. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  7. Slice and serve, garnishing with additional peach slices and mint leaves.

Notes

For a vegan version, substitute with dairy-free mascarpone and cream. Avoid soaking ladyfingers too long to prevent mushiness.
