A refreshing twist on the classic Italian dessert, this Peach Tiramisu features juicy peaches and rich mascarpone for a delightful fusion of flavors.

- 3 ripe peaches, washed and sliced
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 24 ladyfingers
- 1 cup peach juice or syrup
- Fresh mint leaves (optional)
Instructions
- Prepare the peaches by washing, peeling, and slicing them thinly; set aside.
- In a mixing bowl, whip heavy cream and sugar until soft peaks form.
- In another bowl, mix mascarpone cheese and vanilla extract, then fold in the whipped cream until well combined.
- Soak each ladyfinger in peach juice quickly and layer them in the bottom of a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers and add a layer of sliced peaches; repeat with another layer of soaked ladyfingers and remaining mascarpone mixture.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Slice and serve, garnishing with additional peach slices and mint leaves.
Notes
For a vegan version, substitute with dairy-free mascarpone and cream. Avoid soaking ladyfingers too long to prevent mushiness.
