  • 40 g chopped pistachios
  • unsweetened cocoa powder, for dusting
  • 1 tsp vanilla extract

  • Instructions

  • Brew espresso or strong coffee and let it cool to room temperature; if desired, add coffee liqueur.
  • In a large bowl, whisk the egg yolks with granulated sugar until bright and pale.
  • Beat the mascarpone cheese with vanilla extract until smooth.
  • Whip the heavy cream to soft peaks and fold it into the mascarpone until light and airy.
  • Stir the pistachio paste into a portion of the mascarpone mixture to create a green pistachio layer.
  • Dip each ladyfinger quickly into the cooled coffee mixture; do not oversoak.
  • Arrange a layer of dipped ladyfingers in a suitable dish.
  • Spread a layer of pistachio cream over the ladyfingers, then sprinkle chopped pistachios.
  • Repeat layering with remaining ingredients, finishing with a thick layer of mascarpone cream.
  • Dust the top with cocoa powder and additional chopped pistachios.
