- 1 lb carrots, peeled and cut into 1–2 inch pieces
- 1 lb green beans, trimmed
- 3 tbsp olive oil
- 3 cloves garlic, minced
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and prepare the vegetables.
- In a large mixing bowl, combine the carrots and green beans. Drizzle with olive oil, and add minced garlic, salt, and pepper. Toss to combine.
- Spread the vegetables onto a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, stirring halfway through.
- Once golden brown and tender, remove from the oven, cool slightly, and serve.
