Step 1: Prep and season the roast. Pat the beef dry with paper towels and rub it with a pinch of salt and pepper. If you like garlic in the crust, sprinkle minced garlic over the roast and press it gently into the meat.
Step 2: Optional high flame sear for color and depth. Heat a skillet over medium-high heat and add olive oil. Sear the roast on all sides until a rich brown crust forms, about 3β4 minutes per side. If you skip searing, you can still deepen flavor by building depth in the braising liquid with tomato paste and Worcestershire sauce.
Step 3: Prepare the vegetables. In the slow cooker, place onion slices, carrots, celery, and potatoes (if using) as a fragrant bed.
Step 4: Build the braising liquid. Pour in the beef broth and wine (if using). Stir in tomato paste and Worcestershire sauce, then tuck in the thyme and bay leaves. The liquid should come up to about one third to halfway up the side of the roast; do not flood the pot.
Step 5: Slow cook to tenderness. Place the seared roast on top of the vegetables. Cover and cook on Low for 8 hours or High for 4β6 hours, until fork tender. Resist peeking too often; adjust time near the end if the roast size varies.
Step 6: Rest, thicken, and serve. Transfer the roast to a cutting board and rest 10β15 minutes. Meanwhile, simmer braising liquid in a small saucepan and whisk in a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons cold water to thicken. Return the gravy to the slow cooker, slice the beef against the grain, and serve with the vegetables and sauce. Garnish with parsley.
Step 7: Optional make ahead and reheating tips. Refrigerate overnight for intensified flavors. Reheat gently on the stovetop or in a microwave with a splash of broth. Leftovers can become sandwiches or a breakfast hash.
